The first week of July belongs to bubbles, and at Keuka Spring Vineyards, we’re marking it by celebrating the wines we work hardest to make: our traditional method sparkling wine.
“Traditional Method” means the wine is fermented twice, once to create the base wine, and a second time inside of each individual bottle. That second fermentation is what captures the bubbles, trapping CO2 in solution with nowhere to escape.
It’s the same painstaking process used to make Champagne, and it’s done entirely by hand: whole-cluster pressed, bottled one at a time, aged on the lees, riddled by hand, and disgorged bottle by bottle. The Finger Lakes is the birthplace of traditional method sparkling wine in the Western Hemisphere, and we’re proud to keep that legacy alive.
