Maple Syrup Anyone? How About a Maple Cocktail?

Did you know it takes 40 gallons of sap to make 1 gallon of syrup? Yes, you read that right!

If you haven’t been keeping up with Lev from Treleaven over on our IG (which you really should), you’ve probably seen he’s out in the middle of the woods where there are about 1450 taps over 75 acres of the gold liquid that we like to call Windy Knoll Maple Syrup running free.

Over the past few years, Maple Season has become a fun, exciting, and sweet time for Treleaven Wines. The process, though a bit of a long one, is the perfect way to spend right before the Spring warmth hits the air and the Summer nights become long. And with Lev at the healm and the help of his good buddy and neighbor Phil, Windy Knoll Maple became less of a hobby and more of a staple at Treleaven.

From tapping the lines to boiling the raw sap, labeling the bottles and getting it onto your pancakes (of whatever else you enjoy it on) Windy Knoll is fully made and processed right here in Upstate NY.

Tap, boil, pour, and enjoy. Our personal favorite? Put a bit in your morning coffee or with Spring right around the corner, suck down one of our individual sticks during a long run. Or for a awesome cocktail, try a maple old fashion!

2 parts Whiskey or Bourbon
1/4 part maple syrup (or to taste)
2 dashes of Angostura® bitters
- A splash of soda water
